1tbsppeanut oil
1lbchicken breasts, boneless and skinless
2eggs, lightly beaten
1cupalmond flour
1tbspsmoked paprika
1/2tspgarlic powder
1/2tsponion powder
1/2tspcayenne pepper

Preheat the oven to 375℉. Prepare a baking sheet with peanut oil.
Slice chicken breasts into long strips, 1 to 2 inches wide.
Arrange two shallow bowls side-by-side. Crack the eggs into the first bowl and whisk. In the second bowl, combine the almond flour, paprika, garlic powder, onion powder, cayenne and salt.
Dip each piece of chicken in the egg and then coat with the almond/spice mixture. Place the chicken fingers on the prepared baking sheet.
Bake for 20–25 minutes, until golden in color and cooked through. Serve with dipping sauce.
